MEAT PIES
You can either make your own pie shell or buy two pie
shells at your local market.
1 lb lean ground beef
½ cup chopped onion
4 cloves of garlic, crushed
1 tsp of powdered mustard
1 can of tomatoes
2 cup chopped fresh spinach (Chop it up real fine or run it through
the blender and no will know it is there.)
¾ tsp salt
1 tsp lemon juice (Optional)
½ tsp crushed chilies
Take all the filling ingredients and place them in a frying pan and
bring to a boil. Simmer uncovered for 30 minutes. Do not let it boil
dry and burn.
Chill for 2 hours.
Roll pastry as for a pie the size of a saucer or small plate.
If you are using ready made pie shells take them out of the aluminum
pan and place on floured flat surface.
Place filling in the center of each pastry circle
Use your finger to dampen the edges of the pie shell with a little
water.
Fold each circle in half and press edges together. Take a fork and
press on the edge with the fork pointed to the center of the pie.
This will seal the edges. Don’t press to hard but hard enough
to leave mark both pieces.
Put on greased cookie sheet brush with oil or butter.
Bake in 425 degree oven for about 20 to 25 minutes, or until golden
brown.
You can add any of your favorite spices to the filling mix that you
want to. Add some chopped up jalapeño’s or other peppers
to put a little fire in you life.
